Chef Long’s Tosca and Caffe Tosca in Hingham, serve rustic, regional Italian cuisine while his menus at Empire on the Boston Waterfront, Red Lantern Restaurant & Lounge in Boston’s Back Bay Neighborhood and SHRINE at MGM Grand at Foxwoods feature bold and unique flavor combinations made from the freshest ingredients that evoke the sights, smells, and cultures of Asia. At Foxwoods Resort Casino, Chef Long’s Scorpion Bar serves Mexican cuisine and High Rollers Luxury Lanes & Lounge boasts American classics.
In his role as Executive Chef, Long oversees the entire kitchen operation and is responsible for menu creation and execution at each location. As each property focuses on divergent cuisines, Long has developed eclectic menus that are largely reflective of his culinary mission to incorporate interesting and high-quality ingredients to create unique cuisine with international influences.
